TOM’S EASY CHICKEN ENCHILADAS
Serves 6
INGREDIENTS
I pkg Reduced fat cream cheese mixed with 1/2 package frozen spinach or small can artichokes (or you can buy 16 oz prepared spinach or artichoke dip)
Large can green enchilada sauce
1 small can chile peppers diced or whole
3 chicken breasts
1 small can black beans, drained
I cup Wild Rice (optional)
6 Tortillas
1 cup Mexican 4-Cheeses, grated
8 fresh small peppers, halved with seeds removed
1/2 cup Fresh cilantro, chopped
DIRECTIONS
Preheat oven to 375.
Lightly oil 9x12” baking dish.
Put chicken & enchiladas sauce in a large heavy pot OR place in an instant pot and cook on poultry setting for 30 min.
While chicken is cooking, cook wild rice according to package directions, then rinse & drain black beans and set aside.
Once the chicken and enchiladas sauce is finished cooking. Separate chicken from sauce. Set sauce aside for later use. Pull chicken apart with fork.
Add cream cheese and black beans (an rice if desired) to shredded chicken.
In a heavy pan, grill the small peppers.
Place tortilla on a plate. Add chicken mixture. Roll tortilla and place seam down in 9” x12” pan. Repeat process with remaining 5 tortillas.
Spoon reserved enchiladas sauce on top until enchiladas are covered. Cover with foil and cook for 30 minutes.
Remove from oven and remove foil. Sprinkle ehchiladas with cheese. Arrange grilled peppers on top of cheese. Cook for another 30 minutes until cheese is nicely melted and lightly browned. Remove from oven, top with fresh chopped cilantro, serve and enjoy.
